What is gluten?

        Many people have trouble digesting gluten, but do they really know what it is. Gluten is a protein that is found in the grain of wheat, barley, and rye. Its job is to give elasticity to dough, helping it rise and keep its shape. This is why some gluten free foods fall apart easily. Gluten is mostly found in bread products, but also beer and other foods. When people who have celiac (like me), eat a trace of gluten, their immune system launches an attack that causes harm to their small intestine. The result is gastric distress and poor absorption of nutrients. This is why it is so important for people with celiac disease to steer clear of gluten.
